Spinach and Apple Muffins

With the struggle of feeding a toddler, I decided to make Spinach and Apple Muffins.

Here is what I did:

  • 1 cup of leftover Apples in sauce from Thanksgiving (pureed it)
  • 4 teaspoons vanilla extract
  • 2 cup fresh spinach, packed (I did two overflowing fistfuls)
  • 1/3 cup sugar
  • 5 tablespoons vegetable or canola oil
  • 3 cups Bakers Flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
The recipe is similar to mamasaywhat in the sense that I doubled a lot of the recipe.  I was looking for a recipe to use leftovers from Thanksgiving and something that needed Spinach.  I didn't double the sugar however because I also didn't know how much sugar was used in the leftover apple sauce (we got it from Lucille's).

My toddler still thinks its cake.  And she loves vegetables so this was a hit for me.  My one-year old also loves it!
