Apple, Strawberry, and Kale Smoothie

This morning I made smoothies with whatever I had in my fridge.  It ended up looking like green machine.

I gave it to my girls and they downed it fast and I had to make refills.

For a portion for them to split:

Half an Apple (cut into cubes with skin on)
5-6 Strawberries (mine were Frozen)
2 Tablespoons of yogurt or 1 big heaping tablespoon
Orange Juice (just enough for the blender to run it smoothly)
Kale (Handful with no stem)

I blended it up and it looked like this. And they loved it!

Spinach and Apple Muffins

With the struggle of feeding a toddler, I decided to make Spinach and Apple Muffins.

I used this recipe as a guide but had to make adjustments for my own:  http://www.mamasaywhat.com/spinach-muffins-recipe/

Here is what I did:

  • 1 cup of leftover Apples in sauce from Thanksgiving (pureed it)
  • 4 teaspoons vanilla extract
  • 2 cup fresh spinach, packed (I did two overflowing fistfuls)
  • 1/3 cup sugar
  • 5 tablespoons vegetable or canola oil
  • 3 cups Bakers Flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
The recipe is similar to mamasaywhat in the sense that I doubled a lot of the recipe.  I was looking for a recipe to use leftovers from Thanksgiving and something that needed Spinach.  I didn't double the sugar however because I also didn't know how much sugar was used in the leftover apple sauce (we got it from Lucille's).

My toddler still thinks its cake.  And she loves vegetables so this was a hit for me.  My one-year old also loves it!

Waffle Christmas Tree

Hi! Sorry for being MIA.  I had my second kid in November, and even though my husband and I are making a lot of stuff, I either didn't take pictures of just haven't posted stuff I do have.

Christmas morning, we made green waffles and made this:

I've seen on pinterest just laying out the squares, but my husband wanted to make it stand up.  So he did.  I liked it.

I used this recipe:

http://www.emerils.com/recipe/6640/Waffable-Waffles

I do not take credit for the recipe! But I got a lot of compliments from guests from Costa Rica.  I really wanted to make this for my toddler and for my nephew who was coming that morning.  They both seem to love waffles and berries!

For the food coloring, I just used blue and mixed in a little yellow to the batter.  As you can see though, especially on the bottom waffles, I didn't put enough food coloring.  So it's safe to say you can go into a really dark forest green color when mixing it.

So there it is!
